The Terre Casali Montepulciano d’Abruzzo DOC Organic is crafted from 100% Montepulciano grapes, hand-harvested between the first and second week of October, at full ripeness carefully measured by sugar content, total acidity, and polyphenolic potential. Manual harvesting ensures the integrity of the clusters and preserves the organoleptic qualities that define the wine’s character.
Winemaking combines tradition with modern red vinification techniques. After destemming, the must remains in contact with the skins for 7–10 days: at 15 °C for the first two days, then at 25–27 °C. Regular pump-overs allow for a gradual extraction of polyphenols and aromatic compounds, essential for the wine’s color and flavor. Once this phase is complete, the wine is gently pressed off the skins and transferred to stainless steel tanks, where it completes both alcoholic and malolactic fermentation. A six-month maturation in steel follows, allowing tannins to soften, before stabilization, filtration, and bottling, with sulfite levels kept far below legal requirements.
In the glass, it displays a deep ruby red hue. The bouquet is intense and fruity, with subtle floral hints. On the palate, it is smooth, balanced, and pleasantly rounded, with medium body and good persistence. At the table, it pairs beautifully with cured meats, pasta dishes, lean meats, and medium-aged cheeses. With its 12.5% alcohol content, it is best enjoyed at 18 °C, while optimal storage is between 8 and 10 °C.
