The Concrete Rosato by De Fermo is crafted from red grapes grown according to biodynamic principles on clay- and limestone-rich soils in the hills of Loreto Aprutino. Harvesting is done entirely by hand, and the grapes are processed with an artisanal approach: a very short skin contact of 1–2 hours, followed by spontaneous fermentation in concrete tanks using only indigenous yeasts, with no temperature control and no clarification or filtration at any stage.
In the glass, it shows an intense pale pink hue. The nose opens with aromas of wild strawberries and raspberry, joined by notes of rose petals, aromatic herbs, and a pleasant mineral touch. The palate is fresh, clean, and deep, marked by vibrant energy and a long finish that echoes fruity and floral sensations.
Ideal with charcuterie and medium-aged cheeses, it also pairs beautifully with legume soups and flavourful fish dishes.
