The Hannibal cerasuolo d'abruzzo doc superiore is crafted in Pianella, where 100% Montepulciano d’Abruzzo grapes grow on calcareous soils and are trained using the spur‑pruned cordon system. The winemaking process is particularly meticulous: after destemming and crushing, the must is cooled for 18 hours, then gently pressed and left to cold‑settle in liquid form for twenty days. On the twenty‑first day, the clear must is racked and inoculated with selected yeasts. Fermentation continues in stainless‑steel tanks at a controlled temperature of 16–18°C for about twenty days, followed by ageing on fine lees in steel until bottling.
In the glass, it reveals inviting aromas of red fruit. On the palate it is fresh, soft, and delicate, despite its notable alcohol content, which adds structure without compromising drinkability. This rosé pairs beautifully with seafood crudo, first courses featuring fresh fish, and oven‑baked sea bass or sea bream with new potatoes.
